I am currently writing a book for Chelsea Green Publishing, an independently owned publishing company with many well known titles including:
- The Art of Fermentation by Sandor Katz
- Organic Mushroom Farming and Mycoremediation by Tradd Cotter
- Perennial Vegetables by Eric Toensmeier.
The working title of my book is, In Defense of Okra. It is scheduled to be published in April 2019.
The book is a narrative exploration of all the incredible uses this often maligned plant has to offer. We discuss the pods, leaves, flowers and seeds (all of which are edible). Plus the fiber and roots. We cover history and future. It’s fun, it’s exciting, and okra deserves some support!
